4-inch knob of ginger, peeled and sliced thin
8 jujubes (Chinese red dates), split & seeds removed
Black sugar (Kokuto) or honey, to taste
3 cups of water
Place sliced ginger, halved jujubes, and black sugar in a small pot.
Top with 3 cups of water. Cover and bring to a boil over high heat.
Turn the heat down to low and let simmer for 15-minutes.
Remove the lid, and let cool for 2-3 minutes. Then strain and serve, OR cool until room temperature, then store in a pitcher.
Don't worries if you can't find black sugar. Use honey instead! Add the honey in at the end (after straining the drink into your cup), instead of boiling it together with the ginger and jujubes at the beginning.
