1 medium onion, halved
4 cloves garlic, smashed or diced small
8 oz. radishes, trimmed and halved
1 (12-14 oz.) package smoked or andouille sausage, cut into 1-inch pieces
8 oz. white mushrooms
1 pound large shrimp, fresh or frozen
1 pound crawfish (or more shrimp)
1 (3 oz.) package crab boil seasoning
4 cups chicken broth, stock, or water
Place onion, garlic, radish, sausage, mushrooms, and crawfish to the pot. Dissolve the crab boil seasoning into the broth, then pour it over the ingredients in the pot.
Secure the lid and cook for 3 minutes.
When the timer completes, quick release the pressure. Add the shrimp, replace the lid and allow the shrimp to cook on Keep Warm for 3-5 minutes. If the shrimp aren’t opaque, replace the lid and cook for another 2 minutes.
Discard the onion and garlic, then serve immediately.
This is a strictly keto recipe. Feel free to add potatoes, corn, and other seafood as you like.
