Ingredients

Crust:

2 cups flour

2 teaspoons baking powder

3/4 cup sugar

1/2 cup melted butter or canola oil

2 eggs, at room temperature

pinch of salt


Filling:

16 oz brick cream cheese, at room temperature

12 oz evaporated milk

3/4 cup granulated sugar

1 tablespoon flour

2 teaspoons vanilla

3 eggs, at room temperature


Sprinkle:

cinnamon

½ cup nuts, such as walnuts or pecans, chopped (optional)

Directions

Preheat the oven to 325.

Make the crust:
In a large bowl, mix together all of the cake ingredients. It should look more like a dough than cake batter.

Press into a 13×9 baking dish, covering the bottom and at least 1/2 the way up the sides.

Make the filling:
In another bowl, combine the cream cheese and sugar on medium-low for about 2 minures. Reduce the mixer speed to low, then add the remaining ingredients, until smooth. The batter will be quite thin.

Pour over the crust and sprinkle with cinnamon, and nuts, if adding.

Bake for 60-70 minutes or until it looks set. It should not be browned, just sort of custard colored.

Cool in the pan on a wire rack. Cut into squares and serve.
